Use symbolize_ksyms by default
This change converts keys to symbols by default when collecting a trace.
Bug: 189485181
Test: Flashed device with change and checked that
1) Traces collected through Traceur have symbolize_ksyms: true in
ftrace_config ("Info and stats" tab on the Perfetto UI)
2) Tracepoints in kworker threads are readable (aren't hex values)
