Well, I found one source that seem to verify Allen did indeed name ES's predecessor after his mother...

[1] It does mention in the article that CF was named after his mother, Carolyn Folks.

History

Entertainment Studios was founded by Byron Allen in 1993 as CF Entertainment ^[1] The company was initially focused on producing low-cost, syndicated non-fiction programming, including interview series and court shows (largely scripted from actual testimony).
