The towering Mississippi native of six feet, four inches and three hundred, ten pounds aptly named "Big E" began his career as a member of the Clarksdale High School Cougars team. Under Cougars head coach Henry Johnson, Jenkins played as a lineman. During the Cougars' 2013 season, Jenkins helped the team finish with a win-loss record of 7-5. Jenkins finished the 2014 season with 19 tackles and 2.0 sacks. His senior year saw him earn Second-Team 5A Mississippi Association of Coaches All-State honors. 247Sports rated Jenkins as a three-star recruit as well as 15th best prospect in Mississippi. After entering MSU in 2014 as a true freshman, Jenkins redshirt season in 2015 included starting in three of 11 games played as both right and left tackle positions. As a sophomore during the 2016 season, Jenkins started five of the 12 games played. In that season, Pro Football Focus ranked Jenkins 2nd in the SEC in pass block efficiency with a 97.8 percentage.
