Español: En un bar de coctelería especializada, se cuenta con una extension del departamento de gerencia para llevar a cabo las labores de requisiciones, compras y almacenamiento de los insumos necesarios para el funcionamiento del establecimiento.
Actualmente en mi espacio de trabajo y basado en propia experiencia en dicho departamento, se trabaja en conjunto gerencia pero es únicamente una sola persona encargada de la relación con los proveedores y el registro apropiado de cada requisición, compra, entregas y todo lo relacionado con los pedidos a vendedores, todo esto por el volumen y capacidad de compra y venta del bar, ya que es un bar que tiene capacidad y servicios limitados. Al igual, así como el control de compras se lleva por una sola persona, el control del almacén se lleva a cabo de la mano de gerencia pero así mismo el jefe de barra y el jefe de cocina son únicos encargados del eficiente control y rotación de los inventarios en almacén. |
