This PR adds the guide from #2110 (comment) to the documentation
This guide can be very helpful for people (like me) who want the thumbs to be on SSD and the rest of the stuff to be on HDD to save on storage costs.
I wonder if this guide can be followed after Immich is already running?
Does this mean that all relevant files need to be copied to their new locations?
