Liquamen ostrearum
Appearance
Liquamen ostrearum (Anglice oyster sauce vel oyster ketchup) modo liquaminis piscium confici potest. Praecepta, quibus liquamen ex ostreis domi confici potest, ab anno 1814 interdum divulgantur. Liquamina huius generis, aut re vera ex ostreis facta, aut sapore ostreario arte composito, sub variis nominibus ab anno 1787 vel antea venditata sunt.[1] Liquamen ostrearum ab iusculo ostrearum differt: hoc enim a coquis ad tempus paratur.
